If you’ve searched for this recipe, there’s a good chance you love the combination of biscuits, caramel and chocolate as much as I do! Something about them is very nostalgic to me. I remember my parents getting me and my sister a pack of mini millionaires bars for our movie nights.

A light and crumbly shortbread biscuit base, a thick layer of gooey caramel sauce, topped with a layer of dairy-free chocolate. Who wants one?

These squares are easy to make and taste absolutely scrumptious! The shortbread is

buttery and crumbly, the caramel is sticky, gooey and perfectly sweet, then paired alongside
the chocolate….well, they’re delicious!

excited to be showing you this new release as it’s so tasty and versatile. Their vegan
condensed milk alternative has a rice and oat flour base. Great for adding into recipes such
as these millionaire bars, banoffee pies, fudge etc.

This new vegan condensed milk alternative has been approved by The Vegan Society.

Is it dairy-free?
It is made in the same factory that also produces other Carnation products so whilst
every effort is made to ensure no milk is in the finished product, we can’t guarantee
this is the case. Even with extensive cleaning and sanitizing, a trace of an allergen

This recipe is made in collaboration with Carnation. This millionaire’s recipe is one from their

website, and I was so excited to give it a go and test out the new vegan condensed milk

alternative. It’s a must make, I’m sure you’ll love it!

Baking time: 20 minutes

Chilling time: Overnight

Serves: 16

Level: Easy

Ingredients for the shortbread base

  • 175g of plain flour
  • 50g of icing sugar
  • 125g of vegan butter alternative

Ingredients for the caramel

Ingredients for the chocolate topping

  • 200g of dairy-free dark chocolate

Method (shortbread)

1. Preheat the oven to 180C, (160°C for fan ovens), Gas Mark 4 and line a 20cm square

baking tin with greaseproof paper.

2. Mix the flour and icing sugar in a mixing bowl with a pinch of salt. Rub in the vegan

spread into the flour mixture using your fingertips. Keep combining the mixture until it just

comes together as a ball of dough. Do not over-knead it at this stage.

3. Press the dough into the lined tin, making sure it is even and pressed into the edges

of the tin.

4. Prick the dough with a fork then place into the middle of the oven and bake for

around 20 minutes, or until lightly golden brown in colour.

Set aside to cool for 15 minutes.

Caramel (method)

1. Place the vegan butter, light brown sugar, Carnation Vegan Condensed

Milk Alternative in a medium-sized non-stick saucepan.

Put the cornflour in a small bowl and add the soya cream, whisking until you have a thickpaste. Add the paste into the pan and mix well to combine.

2. Heat the caramel on low / medium, stirring all the time until it hits a

rapid boil. Allow the caramel to come up to 116°C or firm ball stage on a

sugar thermometer (if you drop a little mixture into ice-cold water it should

form a firm nonsticky ball in your fingers). Leave to cool for a few minutes to

thicken.

3. Pour the caramel over the shortbread base and spread it into the sides. Cool and

then set in the fridge overnight or freezer for a few hours.

Chocolate ( method)

1. Using a bain-marie, fill a saucepan ¾ full with water and place a heatproof bowl on

top. Add in the chocolate melt.

2. Pour and spread the melted chocolate all over the caramel and smooth with a spoon

or pallet knife. Place into the fridge to chill until set.

3. Using a knife briefly dipped into boiling water and then dried, cut the millionaires into

16 equal squares and enjoy!

Keep the millionaires in the fridge, they will keep for about a week.

We've designed the caramel to be spoonable from the tin – so all you need to do is gently spread it into your pie shell, tart case etc. If you beat the caramel it will become softer and will not re-set to a firm texture.
