I love no-bake cookies! There is nothing better than the immediate satisfaction of eating cookie dough that is completely safe when it’s raw. After making a few different recipes, I decided to recreate one of my favorite childhood cookies – the snickerdoodle!

Keto No Bake Snickerdoodle

One of my favorite cookies as a kid was a snickerdoodle. I loved using my fork to press the cookie down before baking it, and then sprinkling the cinnamon and sugar. I took the same fork-press and cinnamon-sugar topping and made a no-bake cookie. The cinnamon-sugar topping gives it the classic snickerdoodle taste.

Since I made this with almond flour and almond butter, it has a slightly softer texture than the baked snickerdoodles. Everyone will love these no bake cookies – especially since the batter is safe to eat right away!

These cookies will be set and ready to eat within 30 minutes. I mean, you can always eat the cookies before they are set, but they will be softer.

I love no bake cookies! There are so many different ways you can make them. Here are just a few ways you can customize these yummy cookies.

  • Top with sugar-free sprinkles
  • Instead of cinnamon, add pumpkin pie spice on top
  • Fold in sugar-free chocolate chips
  • Drizzle this sugar-free salted caramel sauce on top

Keto Holiday Cookies

Wrap these cookies up in a decorative box and give them away as an edible holiday gift. They look beautiful and are the perfect gift for everyone – whether they are on the keto diet or not.

Do you do a lot of holiday baking? Add this recipe to your list of low-carb holiday cookies! It’ll be tough to control yourself from eating them before you give them away – but everyone will love them.

Almond Butter Snickerdoodles

When you make these cookies, use unsweetened almond butter. Normally almond butter comes in a jar and needs to be stirred for the first time. After it’s all mixed up, you are ready to make some cookies!

Take my advice, use almond flour, not almond meal flour. The almond meal flour will make the cookies taste grainy. Almond meal is ground up finer so it will give your cookies a smoother texture.

How To Make The Cookies Ahead

Save yourself time and make these cookies a day or so before your party. In fact, you should make a really big batch if you are going to have company over – they will disappear in no time at all.

You’ll also want to keep a few cookies in your refrigerator when your sweet cravings hit you. These cookies make the perfect high-protein and low-carb snack.

How To Store No Bake Cookies

There are two ways to store these cookies – in the refrigerator or in the freezer. Since they are made with almond butter, they will last longer if you keep them refrigerated.

To store them in the freezer, you’ll need to flash freeze them first. Flash freezing happens when you place them on a cookie sheet in a single layer. Then, you place the cookie sheet in your freezer until all of the cookies are frozen solid. After the cookies are completely frozen, you can place all the cookies in a plastic freezer bag together.

They will last about 3 months in the freezer.

Easy To Store In Refrigerator

If you prefer to store them in the refrigerator, let them set in a single layer in the refrigerator for about 30 minutes. After they are set, they will have a firmer texture and you’ll be able to place them in a sealed container. They will stay fresh in the refrigerator for up to a week.
