Everyone loves a good bread bowl! Especially when the weather is colder and you crave a hearty soup. A bread bowl provides a fun way to have soup with bread. Just rip off pieces of the bread bowl and dip it into your comforting bowl of soup. Kids will love this meal because they get to eat with their hands!

A bowl of soup in a keto bread bowl is a simple recipe to serve at lunch or dinner. The low carb bread bowls will take around 20 minutes to prepare. If you use a ready to make keto soup, like those from my friends at Power Provisions, you can have a bread bowl filled with hot, comforting soup in less than 30 minutes!

    Preheat oven

    Preheat oven to 400 degrees.

    Melt cheeses

    Add shredded mozzarella cheese and cream cheese to a small glass bowl. Microwave at 1 minute intervals until the cheese is melted and cream cheese has softened. If you don't want to use a microwave, melt the shredded cheese over the stovetop using a non-stick skillet and use softened cream cheese.

    Make dough

    Add all ingredients, including melted cheese to a food processor. Pulse until combined. You may also combine the ingredients using an electric mixer; however, using the food proccesor is recommended.

    Form balls

    Wet your hands with some water or oil in order to handle the dough in order to prevent the dough from sticking to your hands. Form four even sized dough balls and place, evenly apart, on a parchment lined baking tray.

    Bake them

    Bake at 400 degrees Fahrenheit for 15-20 minutes or until hardened on the outside and slightly firm on the inside. Let cool for 3-5 minutes before eating.

    Cut off the top of the bread bowl and carve out some of the bread inside to make room for the soup.

    These keto bread bowls can be made ahead of time. If you love to meal prep each week, you can make a few of these bread bowls ahead of time and save them to eat throughout the week. They will store at room temperature on the counter for a few days or you can refrigerate them.

    One of the biggest challenges with making keto bread is trying to get it to rise and produce airy, fluffy bread. Low carb, gluten free breads typically don’t use gluten based flours or yeast which help bread dough to rise. But I have some tricks you can implement to produce a tasty, airy bread roll.

    In this recipe, we utilize two leavening agents – baking powder and baking soda. The baking soda needs an acidic component to produce it’s leavening effect. That is where the buttermilk or yogurt come in. Both of these ingredients are acidic and will react with the baking soda to produce carbon dioxide bubbles which will puff up the bread as it bakes.

    Another tip to help your keto bread bowl rolls rise is to throw a handful of ice cubes in the oven while the rolls are baking. The ice cubes will rapidly melt creating steam. Steam in the oven will also help you keto dough rise.

    How to mix keto bread dough

    The best way to mix up this keto bread dough is to use a food processor. Since this is a fathead dough, the best way to incorporate the cheese with the rest of the ingredients is with an electric tool – like a food processor or mixer. I prefer the food processor because just a few seconds on the pulse button and the ingredients are combined. You can use an electric mixer but it’s a little messy because the ingredients can fly out of the bowl sometimes.

    Is buttermilk keto approved?

    I love to cook with buttermilk. It is tangy and serves as an acid to react with baking soda in order to help baked goods rise. The tangy flavor will cover up the cheese and egg flavor from fathead keto breads.

    Some may say that buttermilk has a lot of carbohydrates in it, it’s really not that much when you break it down per serving. In this recipe for keto bread bowls, we use 1/4 cup of buttermilk. This attributes to 3 net carbs for the entire recipe.

    Keto approved yogurt

    Using a low carb yogurt is an option in this recipe if you don’t want to use buttermilk. Yogurt is tangy and acidic. It will give the bread bowl some flavor and help it rise during baking.

    Look for a Greek yogurt with the lowest carb count. You are only using 1/4 cup of yogurt for the entire roll recipe, so it won’t push your carb limit too much. Check out my recipe for Keto Bread Rolls to learn my favorite brands of keto yogurts.
