Cheesy Chicken Pasta Bake

This was one of those recipes that kind of came about by accident. You know the ones I mean right? The ones where you look in your fridge for inspiration for dinner, grab a few ingredients, mix together and voila a meal.

Sometimes those creations can be a disaster, but then there are times when the end result is so delicious, you want to make it again the next day.

I mean you can't really go wrong with bacon, chicken, tomatoes, pasta and cheese. Well, you possibly could, but you'd have to really try.

This is a real family pleaser and one I go back to again and again, as I know my whole family love it.

I cooked this tonight and it was delicious! I simplified it slightly by just chucking all the sauce ingredients in together rather than seperating the chicken, and I used cheddar rather than mozzarella, but otherwise as written. Thanks!

Well this was amazing! Something magical happened to the sauce while it was simmering. I usually have to add sugar and all sorts of condiments to tomato sauce but this didn't have the usual bitterness so was perfect!

    • Shevy (Slimming Eats) says

Hey Joanne - It is stocked near the tomato paste/pizza sauces in most Canadian supermarkets (in tall jars) - costco also do a tray pack of 6 I think. If you are in the US, look for tomato puree (not paste) or crushed tomatoes in tins (think there are some cartons too)

    • Shevy (Slimming Eats) says

Hi Kate, pasta is always best eaten once cooked, but I have frozen this and other pasta dishes plenty of times, it just means the pasta will not be al dente. So as long as you are okay with that, it's good. 🙂

I’m thinking of making this on Monday, but I’m quite lazy. Do you think it would be ok if I made it using chicken thighs (I have some that need using up) and put all the ingredients minus the pasta into a slow cooker before mixing together in the casserole dish and adding cheese?

Made this last night using Turkey breasts that I wanted to use up, I also ran out of Tobacco sauce, so used just a tsp of Chilli powder instead.... It all came out great and was a hit with everyone. Will certainly make it again.

Is there a ‘best practice’ for real-heating this? I usually only use half, so have half left over. Thinking of covering in foil and cooking on GM4 for 45mins.....‍♀️

    • Siobhan (Slimming Eats) says

I freeze any leftovers and then defrost and reheat in the microwave or defrost and heat in oven. It's all fully cooked so you just need to ensure that however you reheat, that it is piping hot throughout.

FAQs

Do you cook the pasta first in a pasta bake? ›

Most pasta bake recipes require you to pre-boil your pasta until it's not quite cooked through and then finish it in the oven.

Can you freeze chicken pasta bake once cooked? ›

The best way to make ahead is to cook the sauce and pasta separately, allow both to cool completely. Then toss together and assemble the pasta bake – including topping with cheese. Cover well with cling wrap and refrigerate 3 days or freeze up to 3 months (thaw thoroughly).

Can you freeze pasta and bake with cheese? ›

These comforting pasta bakes, lasagnes and macaroni cheese dishes are perfect for making in advance. Simply freeze until needed on busy weeknights.

What is the golden rule for cooking pasta? ›

In Italy, the golden rule for cooking pasta is 1, 10, 100 or 1 liter of water, 10 grams of salt for every 100 grams of pasta. Converted for American cooks, the rule should be 1/3, 3, 30, referring to 1/3 oz of salt, 3 oz of pasta and 30 oz of water.

Do you cover pasta when baking? ›

PREHEAT oven to 425 degrees. COMBINE uncooked pasta, 1 jar of Sauce and 1 jar of water in a 13 x 9 inch baking pan. Cover with aluminum foil. BAKE 30 minutes.

Can you eat pasta bake cold the next day? ›

It takes many hours for simple starches to convert to resistant starches. Ideally, and for maximum benefit, pasta and rice should be chilled for a full 24 hours before eating or reheating. It's important to refrigerate foods soon after cooking to avoid the possibility of bacterial growth and food-borne illness.

Can you eat chicken pasta bake the next day? ›

A pasta bake or chicken stir-fry dinner can make a great next-day lunch, but how long does it take for leftovers to become unsafe to eat? As a general rule, food should be eaten within two to three days of cooking.

Is it OK to reheat chicken pasta bake? ›

Dishes such as lasagna, pasta bake, or mac and cheese are often cooked in the oven the first time around, so if you originally oven-baked the dish, it's going to be a safe bet to reheat that dish in the oven!

Can any pasta sauce be a pasta bake? ›

It's so easy and inexpensive to make your own, but if you're pushed for time, any shop-bought tomato-based pasta sauce will be fine.

Why is my pasta bake so dry? ›

Pasta absorbs liquid from the sauce as it cooks. If there's too much pasta and not enough sauce, you can end up with a dry bake.

Why is my pasta bake still hard? ›

Before you try to fix your pasta, you'll need to figure out whether it's overcooked or undercooked. Pasta that is soft and mushy is usually overcooked, while if it's crunchy and hard, this is a good indication that you haven't cooked it for long enough.

Do you boil pasta before pasta bakes? ›

Dried pasta needs to be par-boiled, then drained before using it in baked dishes. Just boil for half the time specified on the package. There is a type of dried no-boil lasagna sheets that don't require par-boiling, but they need extra water added to the sauce.

Is it better to freeze pasta cooked or uncooked? ›

Yes! Freezing fresh or cooked pasta by itself is the best way to do it. Cook your dry pasta al dente (which should be your plan anytime you cook pasta, especially if it is going into a hot sauce that will inevitably keep the cooking process going).

How long does chicken pasta bake last in the fridge? ›

This chicken pasta bake is great for meal prep and will last in the fridge for 2 to 3 days. After it's completely cooled, place it into an airtight glass container. Basic pasta recipe:

Boil the water (with salt and/or olive oil) in a large pan. Once boiling add the pasta and cook for 8-12 mins, depending on the shape – see above. Drain and leave to steam dry for a few mins, just until the surface of the pasta looks matte.

Do you cook noodles before adding to casserole? ›

Can you use uncooked noodles? No, you need to cook the noodles in this recipe to the al dente stage before adding them to the casserole. Using uncooked egg noodles would result in an unpleasant gummy texture. The noodles could also absorb more of the liquid than they should and make the casserole rather dry overall.
