Ingredients:

Here's an overview of what you'll need to make Roasted Cauliflower Curry, but keep scrolling for the full recipe amounts.

  • Cauliflower: You can either buy pre-cut cauliflower or an entire head of cauliflower for this recipe. If buying a head, look for one that is heavy for its size and has densely packed florets. Cut the cauliflower into bite-sized pieces with some flat sides for easy roasting. Either way, you'll need about 2 pounds of cauliflower.
  • Olive Oil: You'll need a nice olive oil for roasting. I like to use this one.
  • Curry Powder: Curry powder is an Indian spice and a rich blend of turmeric, cumin, coriander, ginger, and black pepper. For the most flavor, make sure your spices are fresh and replace them yearly. Try this one!
  • Garlic Power: I like to use some extra garlic powder in my curry roasted cauliflower to bring out the rich flavors. Garlic power is a great way to evenly distribute garlic flavor on roasted veggies without having little bits of burnt cloves of garlic.
  • Lemon: Fresh lemon brightens up the dish and brings out the flavors.
  • Salt & Pepper
  • Cooking Spray
  • Garnish: Fresh Cilantro

Instructions:

Here's an overview of the instructions to make the Roasted Cauliflower Curry, but keep scrolling for the full printable recipe.

  1. Preheat your oven to 425 degrees and spray a baking sheet with cooking spray. For easy cleanup, line your pan with foil or parchment paper.
  2. In a medium bowl, toss the cauliflower florets in the olive oil, lemon juice, curry powder, garlic powder, smoked paprika, salt, and pepper to taste.
  3. Put the cauliflower on your baking sheet, evenly packing it out.
  4. Roast for 20-25 minutes until the cauliflower is tender and the edges are crispy.
  5. Put the Curry Roasted Cauliflower on a serving platter and top with chopped cilantro.

Pro Tip: Make sure your cauliflower has plenty of space on the pan- don't crowd it. That's the best way to get a crispy roasted vegetable.

Variations

I love this Roasted Cauliflower Curry recipe as written, but here are some ways to mix it up.

  • Mix up the Veggies: You can use these same flavors and spices with different roasted vegetables. You can also try to mix in broccoli, potatoes, or carrots.
  • Mix up the Citrus: Swap out the lemon for lime juice for a different twist and flavor.
  • Make it Spicy: Add red pepper flakes or a dash of your favorite hot sauce.
  • Add a Yogurt Sauce: Mix plain greek yogurt, lemon, garlic, and curry powder to make a simple yogurt drizzle or dipping sauce. Or serve it with my Homemade Tzatziki Sauce.

FAQ

How do I store leftovers of Roasted Cauliflower Curry?

Store leftovers of Roasted Caulifower Curry in an airtight container in the fridge for up 5 days.

How do I reheat it?

You can reheat it in the microwave, but it will not have the same texture. It will still taste good though. To replicate the crispy fresh roasted cauliflower, reheat it in the oven at 425 for 5-10 minutes until warmed through.

Can I make this ahead of time?

Yes, you can make this and reheat it for meal prep. If you are trying to make it ahead for guests, I'd cut the cauliflower and toss it into a ziplock bag with the olive oil, lemon juice, and spices. Store it in the fridge. When you are ready to serve it roast it fresh so it tastes the best. But you can save time by doing the prep work ahead of time!

Why does my roasted cauliflower get mushy?

You'll need to make sure your cauliflower is evenly spaced and uncrowded on the pan so it roasts and not steams. If it's crowded it will just steam.

Also cooking it at a high heat helps! Also don't overcook it, as it is best when it still has a bite of a bite for texture.
