What’s the difference between a spiced lentil soup and a dhal? Hmmm… A little more water? 😉

I pack my spiced lentil and tomato soup full of gorgeous spices, lots of tomatoes and nourishing lentils with a lovely soupy consistency–but with all amazing flavour of my favourite dhal.

I remember the first time I tasted dhal; I was in sixth form and it was also my first balti experience–yes, living in the UK in the Midlands meant I was lucky enough to start my Indian food journey deliciously.
Of course, it wasn’t long after that I went to India for the first time and it blew my mind with all the incredible food vegetarian delights!

My deliciously nourishing soup is seriously tasty with flatbreads and dips. I like to make a big batch and portion it up for delicious and healthy lunches.

Ingredients

  • 1 tbsp olive oil
  • 2 small onions chopped
  • 3 cloves garlic sliced
  • 1 knob ginger grated
  • 1 tsp black mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp ground coriander
  • 1/2 tsp chilli flakes
  • 2 cups red lentils rinsed
  • 5 cups water
  • 3 tomatoes chopped
  • 1 organic veg stock cube
  • Juice 1/2 lemon
  • 1/2 tsp sea salt
  • Twist black pepper

Instructions

  • Add the onion to a large pan with the olive oil and sauté for 10 minutes on a low heat. Add in the spices, garlic & ginger and fry for a further few minutes.

  • Thoroughly wash & drain the lentils.

  • Next, add the lentils, water, veg stock cube and the tomatoes to the pan and simmer for 20 minutes on a low heat.

  • Finally, squeeze in the lemon juice and season with salt & pepper.
