Ingredients
- 1½ lbs 650 g boneless, thin cut pork chopboneless, thin cut pork chops
- sea salt and ground black pepper
- 1 tbsp 1 tbsp olive oil
- 1½ oz. 45 g butter
- 2 tbsp 2 tbsp capers
- 1 cup 240 ml chicken broth
- 2 tbsp 2 tbsp lemon juice
- 20 (12 oz.) 20 (350 g) cherry tomatoes
- 2 tbsp 2 tbsp fresh parsley, chopped

Making low carb simple
Instructions
Season the pork chops generously on both sides with salt and pepper.
Heat the olive in a large saute pan over medium-high heat. Add the pork to the pan and cook until browned on both sides and cooked through, about 2 minutes per side. Remove from the pan and cover to keep warm.
Reduce the heat to medium and add the butter and the capers to the same pan. Cook until the capers are hot and sizzling.
Add the chicken broth and lemon juice to the pan, and using a rubber spatula, scrape up and mix in any bits stuck to the bottom of the pan.
Increase the heat to medium-high and bring to a boil. Boil until the sauce has been reduced by about half.
Reduce the heat to medium and add the tomatoes to the pan. Cook until soft and slightly blistered, about 3 minutes.
Plate the pork and pour the sauce over the top. Garnish with fresh parsley.
Tip
This dish can also be made with chicken.

I like spice so I added garlic and crushed red pepper, but this is a great recipe. Pork is tender and juicy. I look forward to making this again!

Made this with chicken and added some chilli, delicious. Your recipes are great in that they use common ingredients that are generally found in most kitchens not some wierd named products that you only use once.

I decided to make this into a piccata-ish meal by adding garlic with the capers and butter (duh) and whole fat whipping cream. I also cut up a bunch of mushrooms and sauteed them with the meat because lawd I need magnesium. Delicious!

The total carbs are 4 grams per serving. The default number of servings is 4, but you can certainly adjust that as needed!

This meal is AMAZING! I buy the pack of thin pork steaks from Woolworths (Australia) and have it on the table in 30 mins from start to finish. Reducing the sauce is a vital step - OMG it is divine! I serve it with steamed vegetables such as broccoli, cauliflower, zucchini etc. The family love it, it is a really "fancy" dish that would please the fussiest guests. I had never really tried capers before but they work so well with the lemon flavouring. Give this one a go! I think you will love it 😁
