Ingredients

  • 1½ lbs 650 g ground beef or ground turkey
  • 2 tbsp 2 tbsp heavy whipping cream
  • 2 2 garlic clove, mincedgarlic cloves, minced
  • 1 tbsp 1 tbsp dried basil
  • 1 tsp 1 tsp salt
  • ¼ tsp ¼ tsp ground black pepper
  • 4 oz. (1 cup) 110 g (230 ml) shredded mozzarella cheese
  • 2 tbsp 2 tbsp butter, for frying

Making low carb simple

Instructions

  1. In a large bowl, combine the ground meat with cream, garlic, basil, salt, and pepper. Combine well using your hands or a large fork.

  2. Shape the mixture into balls using wet hands. The bigger you make them the longer they will take to cook. Flatten them out in your hand and place a pile of cheese in the middle of the patty. Wrap the meat around the cheese and form it into a ball. Repeat until you've used all of the meat and cheese.

  3. In a large frying pan, fry the meatballs in butter over medium-high heat until nicely browned.

Tips

Turn those juices into a delicious sauce! Just add 1 cup of heavy whipping cream to the pan juices and bring it to a boil. Stir and simmer for a few minutes to reduce to the desired consistency.

You can deepen the flavors even more by adding 1 tablespoon of gluten-free Japanese Tamari soy sauce and a little more black pepper.

Note: Because the meat will shrink during frying, some of the cheese might slowly leak out of the meatballs by the end of the cooking process. We consider that a visually delicious bonus!

    Hi JIM!
    Look at the box in the top left corner of the picture where it says strict low carb. If you hover your mouse over that you find macros and the amount of carbs per serving.

    Sorry about that not up to it with the technology as l commented had the stuffed meatballs for tea tonight my family thourouly enjoyed it so simple to make thank you.

    I made the meat balls today and the were not bad, but still... much to improve: too much water and too little seasoning. Instead of the water I would use an egg to bind the ground beef.
    And before frying in butter maybe they need to be poached in boiling water for a few minutes and then rest to cool them off.
    However next time they will be perfect.

    Made these today. I added some steak seasoning and garlic powder to the burger. While frying, the burger would split, exposing the cheese. Not a big deal until i noticed the cheese was completely melting out of the meatball. I may have overcooked them because they were a little dry.

    Used shredded mozzarella cheese for this. They were devoured pretty fast by the kids that the hubs didnt get any, and he and I are the ones doing LCHF. Next time I'll double from 4 to 8, so that we have enough for lunch the next day.

    I agree with the comment above... Shredded mozzarella is helpful in keeping these from not falling apart as they are cooking.

    We loved these and will make them again. Prepared them in the morning and put them in the fridge which firmed them up before cooking so they didn't fall apart.

    I added some eggs and pysyllium seeds. They were rather tasteless and I am Swedish so I know about meatballs. A tip is to use garlic and other flavours like paprica powder. Feel free to add different flavors.

    I just came cross this meatball recipe and saw your comments for improvement. I think I’m going to try that tonight. It sounds like you know what you’re doing and I’m wondering what poaching before frying does for the meatballs? And A few other people commented that it might be better to use shredded cheese. What’s your thoughts?

    Well I just read over everyone's comments---got as confused as anyone trying to figure out if a reasonable dish of
    this recipe is 1 carb--or? (I try to choose dishes that are low in carbs---I already paid dearly for going over my 20 carbs per
    day--Not fun at all--and don't like starting over!) So I budget wisely to go low.

    If you used 25oz ground beef, that made 4 servings. If you used less ground beef, it made fewer servings. The 1g net carbs is per serving and the original recipe is written for 4 servings, but many scale it to make less if doing the two week challenge.

    These look delish but can someone please tell me what tamari is which is mentioned in the tips at the bottom of the recipe. It seems as though it might be some sort of soy sauce which I thought was a no-no for keto meals, as soy products supposedly mess with your hormones. Is soy sauce different because the beans are fermented?

    Tamari is a gluten free soy sauce. Many people do choose to avoid soy entirely, you can use coconut aminos instead.

    The 4 serving recipe instructions indicate you should make 10 meatballs. This gives 2.5 meatballs per serving.

    Just made these with adding smoked paprika. Put in fridge to firm up. I will brown them on the hob but am intending to finish them in the oven along with cabbage and courgettes. Only had 500g of beef mince so have made quantity for 3 - dinner today and tomorrow and 1 in the freezer for next week!

    I love how flexible our recipes are for the number of servings. Like you, I frequently adjust the servings based on what I have on hand.

    I just made these for the first time and cooked them on a buttered baking sheet at 425 degrees for about 20-25 minutes, followed by a few minutes under the broil. They came out great. I blended the shredded mozzarella right into the meat mixture and it made for the perfect texture to hold together firmly. I did not feel like babysitting them in the frying pan…as I made a large batch using a 2.5 pound package of ground turkey. While that amount of meat approximated the 7 serving Diet Doctor recipe, I made 18 meatballs and portioned it into 9 servings of two meatballs. Each serving had 2.5 g carbs, 23.3 g fat and 45.3 G protein (per MyFitnessPal recipe feature…i hand input all my ingredients). I did not have many carbs left in my day to keep to 20 grams/day and this fit the bill for my dinner to stay in ketosis. I used the juices from the pan to make some gravy, too. The meatballs were filling! I have some in my freezer.
