Insane Sausages is a quick-service eatery that serves classic Cajun offerings and some of the most unique sausage creations and is just a short drive from Lake Charles, located off one of the first exits in Louisiana when heading eastbound from Texas. Owner Derek Gaspard is a Louisiana native who grew up making sausage with his dad. By his late twenties, he had settled into a lucrative career working at a plant and living in Houston, but his true passion was making Boudin and coming up with "weird, odd flavors," as he describes it. On his days off, he would make 100 pounds of boudin for his family and friends to enjoy. In 2015, Derek began thinking seriously about taking the advice of those who had fallen in love with his Boudin and decided to start his own business. He decided on this location that had been in great disrepair and took a year and a half to make the necessary renovations. In March 2019, he opened the doors and began showcasing his specialty smoked boudin and sausages, which he smokes between five to eight hours, depending on the type of sausage. Menu items change regularly, as Derek adds new and fun twists to popular dishes. A few of the popular menu items include: Steens Syrup Sausage, which includes a generous portion of syrup that it's almost dripping as it's being stuffed into the casing.
