ingredients

  • 1 cup finely chopped cooked chicken
  • 12 cup chopped lettuce
  • 12 cup shredded reduced-fat sharp cheddar cheese
  • 13 cup chopped green onion
  • 13 cup minced red bell pepper
  • 4 ounces light cream cheese, softened
  • 2 tablespoons low-fat sour cream
  • 1 tablespoon hot red pepper jelly
  • 3 (9 inch) flour tortillas

  • In medium bowl, combine chicken, lettuce, cheddar cheese, green onions and red pepper.
  • Set aside.
  • In small bowl, beat together cream cheese, sour cream, and red pepper jelly on low speed of electric mixer.
  • Spread 1/3 cream cheese mixture over one side of tortilla.
  • Sprinkle with 1/3 chicken mixture, leaving 1/2 inch border at top just covered with cream cheese mixture (so you can seal it closed.) Roll up tightly, jelly roll style.
  • Wrap tortilla roll in plastic wrap.
  • Repeat with remaining tortillas and filling.
  • Refrigerate for 2 hours.
  • Trim off the ends and cut each roll into 8 slices, serve cold.

  1. These are so, so good! I've made other "pinwheels", but these are our favorites thus far. The red pepper jelly is a MUST. And I did add a little extra per some of the other reviews -- I might even "pump" it up a little more the next time. I wished I could "master" the technique of wrapping the pinwheels tighter! I thought I had them really tight, but when I cut them, they weren't as tight as I had wanted. But they held their shape ok -- so I guess I shouldn't complain. All do NOT omit the lettuce, it's really important. One thing that I will be sure and change the next time is to at least DOUBLE THE RECIPE!!!! You sure can't eat just one pinwheel. (And I placed the chicken in my small food processor and chopped it that way -- it was the perfect consistency). Thanks for sharing your recipe.

  2. I made these last night and ate one as a wrap. Delicious! I had a little bit of the veggie/chicken filling left, but I'm going to use it in soft tacos. I love pepper jelly on top of a block of cream cheese with crackers, so I knew I would like this. I don't give five stars unless a recipe makes me go, "MMM-MMM" as I'm eating it. The whole time I was eating these, that's exactly what I did. I can't wait to have another for lunch today. Thank you for the recipe!

  3. I made these yesterday for a backyard party we had for 30 people and several people asked me for the recipe. I could not find the red pepper jelly at my supermarket so substituted it with BBQ sauce and it worked out just fine. Thanks, Rhonda!

  4. My daughter (13 yo) made these this weekend for her gang. We didn't have regular cream cheese so we used roasted garlic cream cheese and she forgot to put the cheese in. They gang asked for more to be made next weekend. We all loved them!

  5. These were delicious!! I did tweak the recipe a little bit. I had turkey on hand, so I used that. I also added 3 crispy slices of bacon chopped up. I used both wraps and tortilla. I wanted to see which was better. Both were really good. The tortilla was a little easier to form into a nice tight roll hugging the ingredients. Great recipe. Thank you SO much. :o) Quite a few people asked what they had in them.

Tweaks

  1. Oh my goodness were these good! I made them the day before I wanted to serve them and wrapped the rolls tightly in saran wrap. I think it helped blend the flavors and made cutting the pinwheels very easy. My little wheels held together really well. I did made one slight change - I used roasted red peppers instead of raw red bell peppers because that is what I had on hand - they were really good and I will be making these again.

  2. I actually made this twice. The first time was a trial as it was for a big boss farewell party and I wanted to make sure it was good. I left out the red pepper jelly as I couldn't find any, used honey mustard instead of sour cream and couldn't find 9 inch tortillas so used 7 inch ones and used ready-shredded cheddar and mozeralla cheese. As the tortillas were smaller, I got 4 rolls. My colleagues tried it and said it was too rich. So I used Japanese Mayo instead of cream cheese for the actual party. It was all gone!!! It has also inspired a couple of my colleagues to use tortillas in their meal planning. :-)

  3. I made these using regular (not reduced fat) ingredients and they were wonderful. I did add an extra tablespoon of hot pepper jelly and substituted baby spinach leaves for the lettuce. I took two sliced rolls to a party and they disappeared in minutes. The third roll I shared with my daughter. I'll be making this a lot, both for appetizers and for a lunch wrap. Great recipe!
