If you’re a fan of lotus biscoff cookies, you are going to adore these biscoff overnight oats. Creamy oatmeal is combined with spiced cookie butter for a delicious yet nourishing breakfast!

I don’t know what I enjoy more. Eating lotus biscoff spread straight from the jar, or integrating it into my recipes. There is something about that spicy, caramelized biscuit flavour that hits the spot like nothing else.

Normally, the recipes I use it in are rather indulgent, like my Biscoff Carrot Cake Cheesecake. Which is possibly the best cake I’ve ever made, just by the way.

I figured it was time to integrate biscoff into some breakfast recipes. As I am currently in my oatmeal era, biscoff overnight oats seemed like the perfect recipe to start with.

What is Biscoff?

“Biscoff” is actually just the brand name used in the US and the UK for Speculoos. Speculoos is a sweet, spiced biscuit that was originally manufactured in Belgium.

Lotus Biscoff comes in two main forms- lotus biscoff cookies, and lotus biscoff spread. The latter is a sweet spread made from biscoff cookies, similar in texture to peanut butter.

What are Overnight Oats?

Overnight oats are more or less a cold version of oatmeal. Instead of cooking rolled oats to form a warm porridge, you soak them in liquid overnight. This softens the oats to a beautifully creamy texture.

Are Biscoff Oats healthy?

Overnight oats arefull of health benefits. They are rich in fibre, protein and contain a number of vitamins and minerals.

Lotus biscoff spread may not be the “healthiest” spread in the world. However, this biscoff oatmeal recipe only calls for a small amount of the spread. Combine with plenty of other nutritious ingredients, it makes for a well-balanced breakfast.

You just need a few simple ingredients to make biscoff oatmeal, most of which you should already have in your pantry!

LOTUS BISCOFF SPREAD– As mentioned above, lotus biscoff spread is a caramelized biscuit spread that you can find in most grocery stores. You can also use other brands of speculoos spread for the same result.

LOTUS BISCOFF BISCUITS- Topping these overnight oats with crushed lotus biscoff biscuits adds a lovely crunch to the texture of the breakfast. However, you can omit this or top with crushed nuts instead.

ROLLED OATS– If you want a smooth consistency to your biscoff oatmeal, I’d advise using quick oats. If you like a bit more texture, use whole rolled oats (this is my preference).

MAPLE SYRUPI use maple syrup to make these overnight oats naturally sweetened. However, you can substitute this for your sweetener of choice. You can also adjust the amount of maple syrup depending on how sweet you like your oats.

NON-DAIRY MILK-Use whatever non-dairy milk you would like for the overnight oats. I use oat milk here as I find it has the most neutral and creamiest taste.

YOGURT– You can use any thick non-dairy yogurt here, I personally like coconut yogurt. If you are not vegan, Greek yogurt works great.

1. In a large bowl, mix together rolled oats, cinnamon, maple syrup, milk and vanilla extract until well combined. Place into a glass.

2. In a small bowl, stir together melted biscoff spread and yogurt. Layer biscoff cream over the overnight oats.

3. Drizzle with additional melted biscoff spread and sprinkle with crushed biscoff cookie. Cover and place in the fridge to set overnight (or for at least 4 hours). Take out of the fridge and enjoy!

Are these Biscoff Overnight Oats vegan?

Given you use non-dairy milk and vegan yogurt, these biscoff overnight oats are completely dairy-free and suitable for vegans. If you are not vegan, you can use cow’s milk and greek yogurt.

Overnight Oats

  • 1/2 cup rolled oats
  • 1/2 tsp cinnamon
  • 1 tbsp maple syrup
  • 1/3 cup non-dairy milk
  • 1/2 tsp vanilla extract

Biscoff Cream

  • 1 tbsp biscoff spread, melted
  • 1/3 cup non-dairy or greek yogurt

To Top

  • 1 tbsp biscoff spread, melted
  • 1 lotus biscoff cookie

Instructions

  1. In a large bowl, mix together rolled oats, cinnamon, maple syrup, milk and vanilla extract until well combined. Place into a glass.
  2. In a small bowl, stir together melted biscoff spread and yogurt. Layer biscoff cream over the overnight oats. Drizzle with additional melted biscoff spread and sprinkle with crushed biscoff cookie.
  3. Cover and place in the fridge to set overnight (or for at least 4 hours). Take out of the fridge and enjoy!
